HONEY TOFFEE
Featured Recipe from Judy Donald

Ingredients:

4 cups sugar
1/4 cup honey

1 & 1/2 cups water

1 & 1/2 cups blanched almonds
 

Method:

Place sugar, honey and water in saucepan. Bring slowly to the boil, stirring constantly, then do not stir after it has begun to boil. Test by dropping a teaspoonful into cold water; the mixture should crackle. Add nuts and pour into pattie papers or a buttered tray. Once cooled, add melted chocolate for extra decadence.

EASY STICKY HONEY SOY MARINADE

Ingredients:

3 tablespoons soy sauce

2 tablespoons vinegar

2 tablespoons honey

1 tablespoon oil

1 tablespoon lime juice

1 clove garlic, crushed

1 teaspoon grated fresh ginger

1/2 teaspoon mixed spice

Method:

Combine all ingredients well in a bowl and add pork, beef or chicken. Marinate overnight. Grill or barbecue over gentle heat

HONEY HEALTH ROLLS

Ingredients:

3/4 cup apricots

1/2 cup water

1 cup skim milk powder

1/2 cup honey

1/2 cup sultanas

1/2 cup desiccated coconut plus extra for rolling

1/3 cup finely chopped almonds

1 teaspoon lemon rind and 1 teaspoon lemon juice

1 teaspoon orange juice

Method:

Combine apricots and water and bring to the boil. Simmer until tender. Remove from heat, add the remainder of ingredients except extra coconut. Divide into four, wet hands and form into rolls. Roll in the extra coconut. Put into refrigerator for several hours or overnight. Rolls can be cut into slices as required. 

Honey health roll recipe

Moist Honey Cake

Ingredients:

1 & 1/4 cups plain flour
3/4 cup honey
2 large eggs
1/2 cup oil 
1 teaspoon vanilla extract
1/2 cup hot water
1/2 cup light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

 

Method:
Preheat an oven to 180C.
Grease an 8-inch round cake pan.
In a large mixing bowl, whisk 1/2 cup of the honey, oil, vanilla extract, and eggs. Add the hot water and whisk until combined.
Add the flour, light brown sugar, baking powder, baking soda, salt, and cinnamon, and mix until fully incorporated.
Pour the batter into the greased pan and bake for 28-30 minutes or until a wooder skewer comes out clean.
Remove the cake from the oven and drizzle the remaining honey over the top. Let the cake cool completely before slicing and serving.​
